
- 250g organic pasta
- 3 tablespoons organic white wine vinegar
- 1 organic lemon (for lemon juice)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 30g olive oil
- 1 medium organic courgette, halved and sliced
- 1 medium organic sweet red pepper, chopped
- 1 medium organic tomato, chopped
- 1 small organic red onion, halved and thinly sliced
- 100g organic cheddar
Accompanying Veg Sticks
- 1/2 Stick Organic Celery
- 1 Organic Carrot
- STEP 1
COOK THE PASTA: Boil the pasta in salted water (the water should taste like the sea!) for 10 minutes or until the pasta is tender. Tip into a colander over the sink, cool the pasta under the cold tap then drain really well.

MAKE THE DRESSING: While the pasta is boiling roughly chop the tomato, slice the courgette and sweet pepper. Season with plenty of salt and freshly ground pepper and add the lemon juice and vinegar. Finely slice the onion. Add to the other ingredients and add the oil.

TOSS TOGETHER: To the pasta add to the dressed vegetables. Add chopped / grated or crumbled organic cheese.
You should have enough for 3 healthy packed lunches - we recommend also packing some other fruit and vegetables to make your 5-a-day in one meal. Some organic carrot sticks or organic celery sticks would be a great accompaniment - and for the child with a healthy appetite add some wholemeal flat-bread or sourdough.
