American pancakes with cherry syrup

  • 350g self-raising flour    
  • 2 tsp baking powder    
  • ¼ tsp ground cinnamon    
  • 2 tsp caster sugar , plus 2 tbsp    
  • 2 large eggs    
  • 150g buttermilk or plain yogurt    
  • 325ml milk    
  • 200g fresh or frozen blueberries    
  • 150g frozen or canned pitted cherries    
  • 1 tsp cornflour    
  • 1 vanilla pod , or 1 tsp bean paste or extract    
  • 200g thick-cut smoked streaky bacon    
  • flavourless oil , such as vegetable or sunflower, for frying    
  • 200g mascarpone    

The ultimate Chicken Cutlets

  • 120g homemade breadcrumbs or panko 
  • 3 cloves garlic, finely chopped or grated
  • 2 tablespoons finely chopped fresh Italian flat leaf parsely
  • ½ teaspoon dried Italian seasoning (optional)
  • 100g finely grated pecorino Romano or parmesan cheese (or both)
  • salt
  • freshly ground black pepper

Creamy Turnip Soup

  • 1 tbsp olive oil
  • 2 tbsp  butter
  • 2 medium onions (or 1 large)
  • 6 garlic cloves, chopped
  • 1/2 tsp dried thyme
  • 1 tsp salt
  • a pinch of pepper (to taste)
  • 3 medium turnips, peeled and chopped
  • 1 large potato, peeled and chopped
  • 940.05 ml vegetable or chicken stock

Leek and Potato Soup

  • 50g butter
  • 450g potatoes, peeled and cut into 1cm pieces (try Golden Wonders or Kerr Pinks)
  • 1 small onion, cut the same size as the potatoes
  • 450g white parts of leeks, sliced (save the green tops for another soup or stock)
  • 850ml-1.2litres/1.5-2pts light chicken or vegetable stock
  • 100ml cream
  • 125ml full-fat milk

To finish 

  • the white part of 1 leek
  • a small knob of butter
  • finely chopped chives

  • 1 tbsp olive oil

  • 2 lbs boneless skinless chicken breasts, cut into thin slices
