Leek and Potato Soup

  • 50g butter
  • 450g potatoes, peeled and cut into 1cm pieces (try Golden Wonders or Kerr Pinks)
  • 1 small onion, cut the same size as the potatoes
  • 450g white parts of leeks, sliced (save the green tops for another soup or stock)
  • 850ml-1.2litres/1.5-2pts light chicken or vegetable stock
  • 100ml cream
  • 125ml full-fat milk

To finish 

  • the white part of 1 leek
  • a small knob of butter
  • finely chopped chives

Chicken Fajitas

  • 30g taco seasoning
  • 1 tbsp olive oil
  • 1 lime, juiced
  • 2 lbs boneless skinless chicken breasts, cut into thin slices
  • 1 red onion, sliced thin
  • 1 red bell pepper, sliced thin
  • 1 yellow bell pepper, sliced thin
  • 1 green bell pepper, sliced thin
  • small flour tortillas, warmed, optional
  • avocado, optional
  • cilantro, optional
  • salsa or hot sauce, optional

Slow-Cooker Beef Brisket

FOR THE BRISKET

  • Beef Stock (cubes/stock pots/stock from the freezer)
  • 1kg - 1.5kg Organic Beef Brisket
  • 3 Organic Carrots (peeled and sliced)
  • 1 Medium Organic Onion (sliced)
  • 500 - 750ml Beef stock
  • healthy pinch of Organic Mixed Herbs
  • A bay leaf

FOR THE ROAST POTATOES

  • 1 Jar goose / duck fat
  • 2 medium organic potatoes per person

FOR THE GRAVY

  • seasoning (salt and pepper)
  • 1 tbsp cornflour

Lamb Varuval Curry

  • 900g lamb or mutton leg or shoulder, fat removed and cut into 2.5cm cubes
  • 1 teaspoon ground turmeric
  • 4 teaspoons oil
  • 2 small red onions, peeled and finely chopped
  • 1 cinnamon stick
  • 2 whole star anise
  • 4 cardamom pods, bruised
  • 1 tablespoon whole fennel seeds
  • ½ teaspoon whole cloves
  • Small handful fresh or dried curry leaves
  • 1 tablespoon prepared ginger-garlic paste
  • 1 small tomato, seeded and diced
  • 1½ teaspoons garam masala
  • 1½ teaspoons curry powder

Baked Stuffed Aubergine

  • 2 organic aubergines, cut lengthwise in half 
  • 3 tablespoons organic olive oil
  • 2 garlic cloves, finely chopped
  • 1 onion, chopped 
  • 4 slices dry bread, finely crumbled 
  • salt and pepper, to taste 
  • 100g fresh orgnic parsley, chopped 
  • 1 egg, beaten 
  • 150g organic cheddar cheese
  • 1 -2 tablespoon  water
