Classic Roast Chicken with proper stuffing

For the stuffing

  • 3 slices of white bread
  • 3 tbsps of chopped parsley
  • 1 tbsp of chopped thyme (take the leaves off the twig in winter as it can be quite woody - or used dried thyme)
  • lemon
  • salt and pepper

For the Roast

  • 1 medium organic chicken 
  • 10 chipolata old-spot sausages
  • 1 pack dry-cure bacon (to put over the top of the chicken when roasting)

Gravy 

    Chicken Pie

    • 2 tbsp vegetable oil
    • 8-10  skinless, boneless chicken thighs(about 1kg)
    • 2 onions, finely chopped
    • 2 celery sticks, finely chopped 
    • 2 carrots, finely chopped
    • 50g butter
    • 50g plain flour
    • 500ml milk
    • 1 chicken stock cube
    • 1 tbsp Dijon mustard
    • small bunch of thyme, leaves picked, or use 1 tsp dried thyme
    • 1 egg, beaten
    • 375g sheet ready-rolled puff pastry

    Fabulous Christmas Pudding

    • 50g blanched almonds
    • 2 large Bramley cooking apples
    • 200g box candied peel (in large pieces) 
    • 1 whole nutmeg (you'll use ¾ of it)
    • 1kg raisins
    • 140g plain flour
    • 100g soft fresh white breadcrumbs
    • 100g light muscovado sugar, crumbled if it looks lumpy
    • 3 large eggs
    • 2 tbsp brandy or cognac, plus extra to light the pudding
    • 250g packet  butter, taken straight from the fridge

    For the brandy butter

    • 175g unsalted butter, softened

    Mushroom, shallot and squash pie

    • 25g dried porcini mushrooms
    • 600g organic shallots , halved
    • 1 tbsp organic olive oil
    • 100g organic butter
    • 1 organic squash, peeled, deseeded and diced
    • 2 organic garlic cloves , finely chopped
    • 2 tsp finely chopped rosemary
    • 2 tsp finely chopped sage
    • 250g organic fresh mushrooms (such as Portobello or chestnut) , sliced
    • 50g organic plain flour , plus a little extra for dusting
    • 500ml organic vegetable stock
    • 500g pack organic puff pastry
    • 1 organic farm-fresh egg, beaten
