Wood Pigeon Fillets
Wild wood pigeon eat from our farms and gardens and produce a delicious dark meat. It is available as whole birds or delicious fillets. Wood pigeon is a meaty bird with a slightly gamey flavour, but quite similar to rump steak; they also have a rich, deep-coloured meat.
Wild wood pigeon has long featured on progressive restaurant menus. This game bird fits in perfectly with our growing appetite for sustainable, locally sourced meat. However, you don't need to be a professional to cook wood pigeon. Rapidly seared (a minute each side) and then rested, soft, succulent boned breast has the fine grain of a prime steak, but thanks to the diversity of its wild diet (seeds, acorns, buds, berries, green crops) it has a more complex earthy, woodland taste.
